Known as the “Godfather of Poke” and an influential figure in Pacific Rim cuisine, our James Beard award-winning Executive Chef Sam Choy knows a thing or two about island flavors. A proud Hawaiian native, Choy spent his early years in acclaimed kitchens throughout New York City before returning to popularize the regional cuisine—specifically poke, which consists of raw marinated fish inspired by ancient Hawaiian practices of eating fresh catches with sea salt and seaweed.
